The story of Midnight Mixology begins with Orgeat. Orgeat is an almond syrup used primarily in tiki style cocktails. It has a complex, bright but nutty flavour which is strong and can be overpowered if not used properly. It is an integral ingredient in Sean’s personal favourite cocktail: The Mai Tai. 

Sean and his family moved to London in the summer of 2022 from Boston. Orgeat is available in most fine liquor stores there and he had grown accustomed to its presence. In his new home, however, he had a tough time finding a cocktail supply store, much less Orgeat. So he learned to make it. It takes four hours to make, regardless of volume, so he made a lot of it. He gave it to some bartender friends and they were impressed and told him he should sell it.  You can find his shop at The Market at Western Fair District.
