Where the forest meets the sea
On Canada's west coast, dinner comes from the ocean, the orchard and the forest floor. Wild salmon over cedar, spot prawns from cold Pacific water, apples and wine from the Okanagan Valley, and the sushi and Pacific Rim flavours that make Vancouver one of the great food cities.
At Taste Ex in London, the West Coast is all timber huts and lodge-style stations, the glow of a Pacific sunset and Lions Gate Bridge on the skyline. Pour a glass of Okanagan wine and take your time. This coast likes it relaxed.
